Pasta & roasted veggies sauce

Milosne linguine  01Ingredients (1-2 portions):
– 200 g cherry tomatoes
– 100 g red pepper (2/3 medium)
– 1 mediuml red onions
– 2 cloves of garlic
– 1/2 bunch of basil
– a handful of parsley
– 1 tsp. sweet pepper powder
– pinch of chilli flakes
– salt to taste
– 1-2 tbsp. of olive oil

Topping (optional):
– parmezan or mozarella or any other favourite cheese
– slices of avocado
– baked shrimps or fish

1. Cherry tomatoes, pepper (cut into pieces), onion (cut into quarters) and garlic – sprinkle with olive oil and salt. Place in a heatproof dish, lined with baking paper. Bake 30-40 minutes at 200°C (400 F).
2. Set aside a few cherrie tomatoes for decoration. The rest of baked veggies, basil and persley leaves blend until you get creamy and smooth sauce. Season with sweet pepper powder, chilli and eventually more salt. Mix all together.
3. Serve with pasta or rice. Decorate with baked tomatoes, fresh basil or persley leaves and toppings (optional). ENJOY!!! :)
